Pumpkin-Spice Chia Pudding
You don’t have to give up cozy fall flavors to feel balanced.
This creamy, spiced pudding feels indulgent—but it’s designed to stabilize energy, support digestion, and ground you emotionally.
Ingredients (Serves 2):
1 cup unsweetened almond or coconut milk
1/3 cup canned organic pumpkin purée
2–3 tbsp chia seeds
1/2 tsp pumpkin pie spice
1/2 tsp vanilla extract
Pinch of sea salt
Optional: 5–7 drops monk fruit/stevia or 1 tsp maple syrup
Toppings: walnuts, hemp seeds, coconut flakes
Instructions:
Whisk all ingredients (except chia) until smooth.
Stir in chia and mix again after 10 minutes to prevent clumps.
Refrigerate at least 2 hours or overnight.
Serve with toppings, a warm tea, and a deep breath.
